Title: Spicy Tofu-Bell Pepper Supreme

Yield: 2 Servings

2tbOlive oil; extra virgin or
2tbVegetable stock
1 1/2cBell peppers; mixed green and red; diced
3/4cOnions, yellow; cubed
1 1/4cSalsa; tomato mild
1/2cOlives, black; pitted
1 1/2cGarbanzo beans, canned drained
1cTofu; baked; cubed
1/8tsSalt
1/8tsPepper

Combine the oil, peppers, and onion in a saucepan and cook over high heat for 5 to 8 minuts. Reduce the heat and add the remaining ingredients. Cook over medium heat for 10 minutes. Serve with Fresh Corn Salad or brown rice.
